Book Parties & Catering Orders
Receive cash payments & provide accurate change
Close outstanding tickets for credit cards
Maintain a balanced cash drawer
Bartender
Take drink orders from customers or waiters
Prepare drinks according to restaurant standards & guidelines
Record Sales on POS
Replenish alcohol & mix supplies
Cut, prepare, & store required fruit & ingredients
Barista
Greet customers at the Ventanita
Place customer orders & process payment on POS
Prepare Cuban coffe according to standards & guidelines
Keep pastry warmer stocked with fresh product
Place Tour Guide orders for groups
Keep Cafetera section clean & organized
Maintain stock of necessary cups, mugs & equipment
Lonchero
Ensure deli case & salad bar are stocked with required ingredients
Ensure sandwiches are prepared neatly, accurately, & in a timely manner
Prepares sandwiches according to restaurant recipes & quality standards
Cuts & preps vegetables such as ham, cheese, lettuce, tomato, etc
Follow daily prep list to ensure supply for the next shift
Stock toppings & condiments so they are readily available
Understands & adheres to proper food handling, safety, & sanitation
Greet customers if a waiter has not attended to them
Clean & maintain sandwich area & prep station
Line Cook
Cooks food items as specified by recipes & standards
Assembles dishes to specified portions & amounts
Ensure that all dishes are prepared in a timely & efficient manner
Perform portion control to minimize food waste
Ensure quality & freshness of ingredients
Cooperating with servers to ensure orders are completed according to ticket & time
Clean & sanitizes all cooking & work surfaces
Restock ingredients at workstation
Clean & maintain kitchen according to restaurant protocol
Sets up & stocks necessary food & supplies in appropriate locations
Performs inventory checks & completes food storage logs
Prep Cook
Follow the prep list provided by cutting & prepping ingredients required
Prepare food in accordance to food safety & label everything with date
Maintain correct stock amount in all locations
Ensure quality & freshness of ingredients
Prepare menu items in cooperation of the kitchen staff
Perform portion control to minimize food waste
Clean & sanitize work surface after all preparation is done
Performs inventory checks & completes food storage logs
Receive inventory supplies & store them in correct location
Dishwasher
Scrape, rinse, & load dishes & silverware into dish machine
Ensure that dish washing machine is operating as need & properly uses chemicals
Wash & sanitize all large pots & pans by hand
Store clean dishes, glasses & equipment in appropriate locations
Empty trash containers regularly
Collect dirty dishes & cups for required sections
Ensure there are always enough clean utensils for the waiters & clean plates for the cooks
Maintain a clean work area & kitchen by sweeping & mopping as needed
Clean food stations & equipment
Clean & maintain both bathrooms on an hourly basis
Follow daily & weekly cleaning lists & procedures
