Bourke Street Bakery is seeking an experienced Head Baker/Kitchen Manager to run our small dedicated and growing team of hard-working bakers & pastry chefs.

This position will suit you if you like to be in the kitchen, enjoy leading people but have some back of house experience with rostering and account management skills.

REQUIREMENTS:
• 3 years + experience as an artisan baker. Deep understanding & appreciation of sourdough bread baking essential.
• Chef experience & genuine food appreciation
• Rostering & supervision of all kitchen staff.
• Recruitment & training
• Experience with wage costing – keeping below 15%
• Supervision of wholesale & retail accounts
• Great references
• You need to be a strong communicator with a positive can-do attitude who is enjoys the independence of leading a team.

At Bourke Street Bakery our bakers work with their hands: mixing, baking, hand shaping, working with freshly milled (on-site) flour, experimenting with ancient grains and fermentation, making a range of daily and changing sourdoughs & yeasted breads, working the pastry section as well.

POSITION and BENEFITS:
• This is a full time position. Schedule at present is Wednesday to Sunday 4am start.
• Annual salary, plus vacation leave, sick pay and quarterly bonuses.
