Ciao, Gloria – a busy Italian-American daytime cafe is looking for its next Head Baker!

You will be in charge of leading a small team of bakers to help create and produce a seasonal bakery menu of pastries and desserts with a decidedly Italian accent. Aside from daily production and responsibilities, you will be in charge of pastry menu creation and development.

We are looking for someone who knows their way around the kitchen, with a positive attitude, who can also hit the following marks:

– Proficiency in baking skills/technique. Oversees and prepares croissants and laminated doughs, brioche and focaccia dough, muffins, cookies, pies, cakes, doughnuts, cookies and other pastries, including icings and frostings, according to established recipes.
– Ability to follow recipes accurately and completely.
– Ability to maintain consistency and quality control with our menu.
– Ability to use commercial kitchen equipment, including dough sheeters.
– Punctuality is a must.
– Have a positive and professional attitude, and willingness to help your team.
– Ability to train and manage others.
– Ability to assemble and decorate layer cakes.
– Understands ordering, managing inventory, organization and consolidation.
– Ability to work cleanly, quickly and efficiently.
– Ability to develop recipes and maintain our recipe catalog.
– Responsible for receiving ingredients and other supplies as required for daily operations.
– Works closely with other kitchen leaders and staff to ensure effective production of items.
– Reviews production schedules to determine variety and quantity of goods to bake and to assemble supplies and equipment needed for daily baking activities
– Completes production sheets and other records as required.

EXPERIENCE:

– Completed a pastry arts degree or certificate
– Worked in a professional kitchen for 2+ years
– Food handler’s certification (required)
– Experience with Italian pastries is a plus
