MIAMI FRESH FISH MARKET:
we are looking for experience sushi chef for our new place
experience only

Skills Required:

2-3 years of experience as a Sushi chef at a medium to heavy volume retail take out store.
Knowledge of sushi preparation, proper fish handling
Knowledge with poke bowls
Knowledge of Japanese/Asian ingredients and fish fabrication techniques
Excellent knife skills and attention to detail
Operational knowledge of hospitality equipment
Ability to multi-task and prioritize
Ability to work under pressure
Accuracy and speed in executing assigned tasks
Excellent understanding of various cooking methods, ingredients, equipment and procedures
Familiar with industry’s best practices

Responsibilities and Duties

Prepare all types of sushi, including maki, nigiri and sashimi and poke
Select fresh fruits and vegetables to make high-quality dishes (like avocado, mango and carrots)
Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy sauce, when appropriate
Manage food prep activities, like boiling rice
Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies
Monitor food stock and place orders, if needed
Practices correct food handling and food storage procedures according to company and state regulations.
Complies with all nutrition, sanitation and safety regulations and standards.
Maintains a positive and respectful approach with everyone.
Other duties as assigned and modified at manager’s discretion.
