NOW HIRING: Sushi Chef/Assistant to Our Executive Sushi Chef

WHERE: Moon (Greenwich, CT), a year-round restaurant and bar, seeks a reliable, hardworking Sushi Chef to join our opening team! We are looking to make an impact as one of the best new restaurants in Fairfield County, and we are building from the ground up.

— Pan-Asian Inspired Cuisine, taking influence from all over the globe, including Japanese, Thai, and Chinese cuisines.

THE POSITION:

We are looking for a Sushi Chef, as well as a Sushi Helper to join the team at our new high-end restaurant. Sushi Chef responsibilities include ordering and handling a wide range of raw fish and other ingredients, managing inventory, and working with a keen eye to detail, to fulfill all orders within a timely and well-executed fashion.
To be successful in this role, you should have experience with and a passion for Japanese cuisine, with preferably 1-2 years behind a sushi bar. Ultimately, you will help us establish Moon as a premier dining destination for Connecticut and the Tri-State Area.

Responsibilities:

Help Our Head Sushi Chef create a rich menu, minimizing waste
Design and price à la carte and omakase menus for impromptu and scheduled special dining functions
Prepare all types of sushi, including maki, nigiri, and sashimi
Manage food prep activities
Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies
Monitor food stock and place orders
Recommend new, modern recipes, with an eye towards fusion cuisine
Responsible for adherence to hygiene and safety standards
Train team members and manage personnel

Qualifications

Past work experience as a Sushi Chef, including menu writing
Well-Versed in various sushi types and sushi-rolling techniques
Ability to work both quickly and accurately
Availability to work during business hours, including weekends and evenings
Flexibility to take on various shifts
Established relationships with local and international, especially Japanese, purveyors
Ability to communicate well and interface with customers
